It’s the only one with tomato sauce and the recipe dates back to the 1800s when tomatoes were added to Pasta alla Gricia, also known as ‘white amatriciana’. Guanciale and pecorino cheese, two of Rome’s most iconic ingredients, are the heart and soul of Amatriciana.
