The easiest of all pasta recipes, this eggless version uses just flour and water combined to make a dough. It can then be shaped into whatever form you prefer and quickly cooked in boiling water before adding the sauce of your choosing.

Flour and Water Pasta
Serves 1
100 g all-purpose flour
50 ml water
The recipe is for 1 person. Just multiply the amounts for the number of people.
Simply combine the flour and water together until they form a dough. If it is too sticky add a little flour, too dry add more water.
Knead together on a floured surface, divide the dough into sections then choose your desired shape. For gnocchetti, roll the pieces with your hands into thin sausage shapes about 1-2 cm thick. Cut into 1-2 cm pieces and then roll along a wooden, ridged, gnocchi board or the back of a fork.
Otherwise, roll through a pasta machine as you would with egg pasta. Then pass through the machine again to make tagliolini or fettuccine. Alternatively, roll small pieces on the heel of the palm of your hand to form strozzapreti.
Cook quickly in salted boiling water for 3-5 minutes before serving with your preferred sauce.
