Irresistible Gorgonzola Mousse: An Easy Appetizer

Even blue cheese haters will be converted with this easy recipe for creamy gorgonzola mousse. Quick to prepare, this delicious spread is the perfect appetizer when spread on crackers or toasted bread. Using just two ingredients, this gorgonzola mousse is a fast pre-dinner aperitivo that takes just minutes to prepare. There’s no need to make it ahead of time. The strong flavor of gorgonzola is mellowed by creamy mascarpone, creating a more subtle taste and luscious texture. If you don’t have mascarpone, you can substitute it with cream cheese for a similar, although not identical, result. Once made, keep it at room temperature (unless you are using it the next day) to ensure a smooth, velvety consistency that spreads easily.

The recipe comes from our favorite family cookbook, Il Talismano della Felicità. Although the original recipe suggests using black olives to decorate, professional cheese taster Benny also recommends trying a drizzle of honey, sliced grapes, or thin slivers of pear. These additions pair wonderfully with blue cheese and create an amazing contrast on your taste buds.

Mousse di Gorgonzola Recipe

Ingredients:

  • 300g (10.6 oz) gorgonzola
  • 250g (8.8 oz) mascarpone, at room temperature
  • Rustic bread or crackers, to serve
  • Black olives, honey, grapes, or pears, to decorate

Instructions:

  1. Prepare the Gorgonzola: First, remove the rind from the gorgonzola. Place it in a bowl and use a fork to mash it until soft.
  2. Combine with Mascarpone: Add the mascarpone and mix well until you achieve a smooth, creamy consistency. Keep at room temperature until ready to use.
  3. Serve: Spread the mousse onto toasted rustic bread or crackers. Top with a drizzle of honey, or slices of black olive, grapes, or pear.
