Classic Homemade Tomato Sauce: Sugo di Pomodoro

Homemade tomato sauce is a cornerstone of authentic Italian cooking, adorning everything from pasta to gnocchi and rice. While each Italian family has its own method, this recipe is a foolproof way to achieve a thick, rich, and flavorful sauce.

Sugo di Pomodoro Recipe

Ingredients (Serves 6)

  • 1kg (2.2 lbs) tomatoes for sauce
  • 1 onion
  • 1 carrot
  • 1 stick of celery
  • Small bunch of fresh parsley
  • A few leaves of fresh basil
  • ½ cup extra virgin olive oil
  • Salt
  • Pepper

Instructions

  1. Prepare the Ingredients:
    • Wash the tomatoes, cut them into chunks, and put them into a saucepan with the olive oil.
    • Chop the onion, carrot, and celery into large pieces and add them to the pan along with the parsley and basil.
  2. Cook the Sauce:
    • Cover and cook on moderate heat for 30 minutes.
    • Remove the lid, add a little salt, and let it reduce for another hour. If the sauce is too liquid, continue cooking to thicken it.
  3. Finish the Sauce:
    • Pass the sauce through a vegetable mill to remove any chunks.
    • Add pepper and adjust the seasoning if necessary.
  4. Serve:
    • Serve the sauce with pasta, gnocchi, rice, or meat.
