Rigagnocchi is a cute wooden kitchen utensil we use when making gnocchi. It literally means gnocchi stripper because it creates stipes when you delicately pass gnocchi over it. Why do we add this extra step when making gnocchi? Well, the shape it gives to the gnocchi and the stripes it creates on them help to capture the sauce. It’s one of those untold cooking secrets that make a world of a difference, not to mention that it’s part of the gnocchi-making tradition.
During our cooking classes, we use rigagnocchi when making multiple gnocchi recipes: potato gnocchi, ricotta gnocchi, and flour and water gnocchi. It is a very inexpensive kitchen utensil and we like using this 100% made in Italy rigagnocchi. So now you know the secret!
